  • Combine the first three ingredients in a mixing bowl and set aside.

  • Combine the remaining ingredients in a sifter.

  • Then, in a blender, mix all of the ingredients and blend until smooth.

  • Pour into a 10" baking pan that has been coated with cooking spray.

  • Preheat the oven to 350°F and bake for 30–40 minutes.

  • Allow to cool completely in the pan on a rack before removing.







1 cup Flour

1 cup Whole Wheat Flour

2 tsp. Baking Soda

1 tsp. Cinnamon, ground

1/2 tsp. Allspice

1/4 tsp. Nutmeg, ground

4 egg whites

1 1/4 cup Twin Brown Sugar (Brown Sugar Substitute)

1 cup Applesauce, unsweetened

1/2 cup Buttermilk, low-fat

1 tsp. Vanilla Extract

8 oz. can pineapple crushed, drained

2 cups Carrots, grated

1/2 cup Raisins

1/4 cup Walnuts, chopped

1 cup Cream Cheese, Fat-Free

2 cups powdered Splenda

1 tsp. Lemon juice

1/2 tsp. Vanilla Extract




Preheat the oven to 350 degrees. Use nonstick cooking spray to coat a 13-inch x 9-inch baking pan.


In a large mixing basin, whisk together the flour, baking soda, cinnamon, allspice, and nutmeg. Using a whisk, combine all of the ingredients in a large mixing bowl. Egg whites should be beaten until soft peaks form in a separate basin.


Slowly add the Brown Sugar Twin, applesauce, buttermilk, and vanilla extract. Stir until slightly moistened with the flour mixture. Stir in the pineapple, carrots, raisins, and walnuts until everything is well combined.Bake  until a toothpick inserted in the middle comes out clean or  for 35-40 minutes

Allow to cool completely before frosting on a wire rack.

To make powdered Splenda, grind normal Splenda into a fine powder in a food processor.

Combine cream cheese, lemon juice, and vanilla extract in a mixing bowl. Stir in the powdered Splenda until it reaches the desired consistency. Apply to the cooled cake. Cut the cake into 16 squares.







8 oz Self-Raising Flour

6 oz sugar (could use sugar substitute)

1 egg

8 oz Mixed Dried Fruit

1 tsp mixed spice

1 tsp baking soda

1 cup of freshly made hot tea

1 x 1lb loaf tin

400F for 45 minutes





Soak the fruit in freshly made hot tea until it plumps up - this can be done overnight.

Mix in the sugar or sugar substitute

1 egg



In a loaf pan, bake for 45 minutes.
